T.G.I.G.F! Healthy Chicken Nuggets

  • 1 Pound  Ground Chicken Breast
  • ⅓ cup  T.G.I.G.F! Baking and Bread Mix
  • 2 tsp Salt
  • 1 tsp Dried Thyme
  • ½ tsp Pepper
  • 1 ½ Tbsp Milk: cow’s, almond, rice, soy or coconut
  • ½ - ¾ cup Shredded zucchini and carrots
  • 1 ½ cup Ground Rice Chex cereal

· Place ground chicken breast in a large mixing bowl.

· Add T.G.I.G.F!, salt, thyme, pepper and mix into ground chicken. 

· Add milk of choice along with shredded zucchini and carrots. Stir until fully combined.

· Place ground rice chex cereal in a large plate or rimmed pie pan.

· Using a large cookie scoop, scoop out chicken mixture into balls. Flatten balls and place in ground rice chex crumbs coating all sides. Place on wax paper lined sheet pan. Repeat until all chicken mixture is used.

· Heat oil of choice in a large skillet and fry approximately 5 minutes per side. Drain on wire rack or paper lined plate.

· Serve with favorite dipping sauce. Enjoy!

· You can also prepare this recipe as described above but don’t fry the nuggets. Lay the prepared nuggets on a cookie sheet coated with wax paper and place in the freezer until frozen. Then transfer uncooked frozen nuggets to a heavy-duty freezer bag. When ready to cook: remove from freezer, allow to thaw a bit and fry as directed above.
