T.G.I.G.F! Light and Fluffy Pancakes

  • 1 ½ cup T.G.I.G.F! Baking and Bread Mix
  • 3 tsp Baking Powder
  • ¼ tsp Salt
  • 1 lg Egg, beaten
  • 1 ¼ cup Milk of choice: cow’s, rice, almond, soy or coconut
  • ¼ cup Oil of choice: olive, coconut, or vegetable
  • 1-3 Tbsp Water
  • ½ tsp Vanilla extract

· In a small mixing bowl combine all dry ingredients, stir with a spoon to combine.

· In a large mixing bowl whisk together the egg, milk, oil and vanilla.

· Slowly add dry ingredients to wet and stir until fully blended.

· Allow batter to rest for 5 minutes to thicken. 

· Add 1-3 Tbsp of water, one at a time, to achieve desired consistency – batter should be thick but pourable.

· Using a large spoon pour batter into heated skillet and cook for 2-3 minutes per side until golden brown.

· Store any leftover pancakes in freezer safe bag, separated by wax paper. When ready to eat simply toast or microwave.
