T.G.I.G.F! Soft Taco Shells/Wraps

  • ¾ cup T.G.I.G.F! Baking and Bread Mix
  • ¼ cup Tapioca Starch
  • ½ tsp Salt
  • ½ tsp Baking Powder
  • 2 Tbsp  Olive Oil
  • 5 Tbsp   Warm Water
  • Tortilla Press or Rolling Pin 
  • Wax Paper
  • Cooking Spray

· In a large mixing bowl combine T.G.I.G.F! and all dry ingredients. 

· Slowly mix into dry ingredients oil and warm water.

· Mix with a spoon or fork until ingredients come together to form a dough.

· Place a sheet of wax paper that has been sprayed with oil on the tortilla press.

· Place approximately ¼ cup of dough onto wax paper and cover with additional sheet of wax paper that has also been sprayed with oil.

· If you don’t have a tortilla press, simply spray two sheets of wax paper with oil and place dough ball in center and roll with a rolling pin or glass on its side.

· Carefully peel dough circle from wax paper and place on a larger piece of wax paper.

· Repeat until all dough is used, separating tortillas with wax paper.

· Heat a large skillet, cast iron works best, over medium heat.

· Place tortilla in heated skillet and cook until dough starts to bubble. Flip and brown other side lightly.

· Lay cooked tortillas on plate and cover to keep warm.

· Freeze tortillas wrapped tightly in plastic wrap in a freezer safe bag.

· When ready to use, warm in microwave. Enjoy!
